Chile Relleno

Prepare the peppers as follows:

Burn the skin on a grill, broiler or directly on a gas stove.  Place the peppers in a plastic bag, tie off the end and leave them for a few minutes to sweat. You can then rub the skin off under running water. Slit the peppers and remove the seeds and the seed membranes carefully not to tear the peppers.  You may use a small sharp knife to cut off the hard head where the seeds are attached if you prefer but retain the stem.

INGREDIENTS:

  • 3 to 4 Poblano peppers
  • 3 eggs beaten as below
  • 1 TBS flour
  • salt, pepper
  • oil
  • Shredded cheese, Monterey Jack or Mexican blend with cheddar

Filling of your choice:

Filling can be the same as in the Eggplant Relleno or just plain cheese, fajitas, taco meat or combination.

I used taco meat for filling here.

  • 1/2 lb. ground chuck
  • 2 TBSP. taco seasoning or 1 pkg. Taco seasoning
  • 1/3 cup water

Brown the meat in a skillet. Drain the fat and add 1/3 cup of water and the taco seasoning. Simmer uncovered, stirring occasionally until almost dry. Remove from heat and cool a bit to room temperature. Meanwhile, while cooling the meat, beat the eggs as below:

Separate the egg whites from the yolks.  Beat the egg whites until soft peaks form.  Add the yolks and beat again to mix. Beat in 1TBS. flour and a dash of salt or about 1/8 tsp.  Set aside.

Divide the meat filling into the number of Poblano peppers. Lay the poblano pepper on a flat surface or plate with the slit side up. Spoon the meat filling in each pepper. Add the cheeses as much as it can hold without spilling over then spoon some egg mixture in with them. Try to close the pepper and using both hands, carefully dip it flatways in the egg mixture, coating it all around with the eggs. Try to do this without breaking the peppers or spilling the fillings. Do one then proceed to fry. Do them one at a time.

Slowly and carefully lay it in the hot oil in the skillet, about ¼” deep and fry the relleno on both sides on med-low heat until the cheese is melted and the egg is set. It will be done very quickly, about 1 minute or less each side.
